A simple, one-pot meal featuring seasoned ground beef, cheese, and rice with Cajun flavor.

- 1 pound ground beef
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 cup beef broth
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1 cup uncooked long-grain white rice
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons chopped fresh parsley (for garnish, optional)
Instructions
- Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess fat.
- Add the chopped onion and bell pepper to the pot. Cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Pour in the cream of mushroom soup, beef broth, Cajun seasoning, thyme, and black pepper. Stir well to combine.
- Bring the mixture to a simmer.
- Stir in the uncooked rice. Cover the pot, reduce the heat to low, and cook for 20 minutes, or until the rice is tender and the liquid is absorbed. Do not lift the lid during cooking.
- Remove the pot from the heat. Stir in the shredded cheddar cheese until melted and creamy.
- Serve immediately, garnished with parsley if desired.
Notes
- Adjust the amount of Cajun seasoning based on your preference for heat.
- You can substitute cream of celery soup for cream of mushroom soup.
