- 1 pound ground beef
- 2 medium sweet potatoes, peeled and cubed
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, paprika, cumin, salt, and pepper on a baking sheet.
- Roast for 15 minutes.
- Add ground beef, onion, bell pepper, and garlic to the baking sheet.
- Stir everything together.
- Continue roasting for another 20-25 minutes, or until the beef is cooked through and sweet potatoes are tender.
- Serve hot.
