- 1.5 lbs chicken thighs
- 1 lb broccoli florets
- 1 lb chopped carrots
- 1/2 cup melted butter
- 4 cloves garlic, minced
- 1 tsp dried Italian seasoning
- Salt to taste
- Pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine melted butter, minced garlic, Italian seasoning, salt, and pepper.
- Add chicken thighs and vegetables to the bowl and toss to coat evenly.
- Spread the chicken and vegetables in a single layer on a large baking sheet.
- Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
- Serve hot.
Notes
- You can substitute chicken breasts for thighs, but adjust cooking time as needed.
- Feel free to use other vegetables like bell peppers, zucchini, or potatoes.
- For crispier chicken skin, broil for the last 2-3 minutes.
