Ingredients

- 1 cup rolled oats
- 1 ripe banana
- 1 large egg
- 1/2 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1 tablespoon coconut oil (for cooking)
Instructions
- Combine oats, banana, egg, milk, baking powder, vanilla extract, and salt in a blender.
- Blend until smooth.
- Heat coconut oil in a non-stick pan over medium heat.
- Pour 1/4 cup of batter per pancake onto the hot pan.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve immediately with your favorite toppings.
Notes
- For best results, use a very ripe banana.
- You can add a dash of cinnamon for extra flavor.
