Ingredients

  • 1 ripe banana
  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil for cooking

Instructions

  1. Grind rolled oats into a flour using a blender or food processor.
  2. In a bowl, mash the ripe banana.
  3. Add eggs, milk, honey or maple syrup, vanilla extract, and salt to the mashed banana. Whisk until well combined.
  4. Add the oat flour to the wet ingredients and whisk until you have a smooth batter.
  5. Heat a lightly oiled or buttered crepe pan or non-stick skillet over medium heat.
  6. Pour about 1/4 cup of batter onto the hot pan and swirl to spread it evenly.
  7. Cook for 1-2 minutes until the edges start to lift and the bottom is golden brown.
  8. Flip the crepe and cook for another minute on the other side.
  9. Repeat with the remaining batter.
  10. Serve warm with your favorite toppings.

Notes

  • For thinner crepes, add a little more milk to the batter.
  • You can add cinnamon or nutmeg to the batter for extra flavor.
