Ingredients

- 1 cup rolled oats
- 1 ripe banana
- 2 large eggs
- 1/2 cup milk
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Butter or oil for cooking
Instructions
- Grind rolled oats into a flour using a blender or food processor.
- In a bowl, mash the ripe banana.
- Add eggs, milk, honey or maple syrup, vanilla extract, and salt to the mashed banana. Whisk until well combined.
- Add the oat flour to the wet ingredients and whisk until you have a smooth batter.
- Heat a lightly oiled or buttered crepe pan or non-stick skillet over medium heat.
- Pour about 1/4 cup of batter onto the hot pan and swirl to spread it evenly.
- Cook for 1-2 minutes until the edges start to lift and the bottom is golden brown.
- Flip the crepe and cook for another minute on the other side.
- Repeat with the remaining batter.
- Serve warm with your favorite toppings.
Notes
- For thinner crepes, add a little more milk to the batter.
- You can add cinnamon or nutmeg to the batter for extra flavor.
- Ensure the pan is hot before adding the batter for best results.
