Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 1/2 cups milk
  • 1/4 cup grated carrot
  • 2 tbsp melted butter
  • 1 tbsp honey or maple syrup

Instructions

  1. Combine rolled oats, flour, baking powder, and salt in a bowl.
  2. In another bowl, whisk together eggs, milk, grated carrot, melted butter, and honey.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Heat a lightly oiled griddle or frying pan over medium heat.
  5. Pour about 1/4 cup of batter onto the hot griddle for each crepe.
  6. Cook for 2-3 minutes per side, until golden brown.
  7. Repeat with the remaining batter.

Notes

  • For thinner crepes, add a little more milk.
