- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 pound fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar (for strawberries)
Instructions
- Combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter in a medium bowl. Press the mixture firmly into the bottom of an 8×8 inch baking pan lined with parchment paper. Refrigerate for 30 minutes.
- In a large bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Spread the cream cheese mixture evenly over the chilled graham cracker crust.
- In a small bowl, combine sliced strawberries and 2 tablespoons granulated sugar. Let sit for 10 minutes to release juices.
- Arrange the sweetened strawberries on top of the cheesecake layer.
- Cover the pan and refrigerate for at least 4 hours, or preferably overnight, until firm.
- Slice into bars and serve cold.
