- ¼ cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 ½ cups heavy cream
- 1 cup mini marshmallows
- ½ cup chocolate chips
Instructions
- Combine graham cracker crumbs, granulated sugar, and melted butter in a bowl. Press mixture into an 8×8 inch pan lined with parchment paper. Chill for 15 minutes.
- Beat cream cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture.
- Spread the cheesecake filling over the chilled crust.
- Sprinkle mini marshmallows and chocolate chips over the cheesecake.
- Chill for at least 4 hours, or until firm.
- Before serving, use a kitchen torch to lightly toast the marshmallows.
