Ingredients

  • 1 cup pitted dates, soaked
  • 1/2 cup raw almonds
  • 1/2 cup raw pistachios
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup cocoa powder
  • 1/4 cup melted coconut oil
  • 1/4 cup dark chocolate chips
  • 1 tablespoon maple syrup (optional)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper.
  2. In a food processor, combine soaked dates, almonds, pistachios, shredded coconut, and cocoa powder. Process until a sticky dough forms.
  3. Add melted coconut oil and maple syrup (if using). Process until well combined.
  4. Press the mixture evenly into the prepared baking pan.
  5. Melt dark chocolate chips over a double boiler or in the microwave.
  6. Pour melted chocolate over the pistachio base and spread evenly.
  7. Refrigerate for at least 2 hours, or until firm.
  8. Cut into bars and serve.
