Ingredients

- 1 cup pitted dates, soaked
- 1/2 cup raw almonds
- 1/2 cup raw pistachios
- 1/4 cup unsweetened shredded coconut
- 1/4 cup cocoa powder
- 1/4 cup melted coconut oil
- 1/4 cup dark chocolate chips
- 1 tablespoon maple syrup (optional)
Instructions
- Line an 8×8 inch baking pan with parchment paper.
- In a food processor, combine soaked dates, almonds, pistachios, shredded coconut, and cocoa powder. Process until a sticky dough forms.
- Add melted coconut oil and maple syrup (if using). Process until well combined.
- Press the mixture evenly into the prepared baking pan.
- Melt dark chocolate chips over a double boiler or in the microwave.
- Pour melted chocolate over the pistachio base and spread evenly.
- Refrigerate for at least 2 hours, or until firm.
- Cut into bars and serve.
