A creamy and refreshing no-bake cheesecake mousse with tropical pineapple and coconut flavors, reminiscent of a Pina Colada.

- 1/2 cup powdered sugar
- 1/4 cup coconut cream
- 1/4 cup pineapple juice
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1/2 cup crushed pineapple, drained
- 1/4 cup shredded coconut
- Optional: Graham cracker crust or crushed cookies for serving
Instructions
- In a large bowl, beat the softened cream cheese and powdered sugar until smooth.
- Add the coconut cream, pineapple juice, and vanilla extract. Beat until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until no streaks remain.
- Fold in the drained crushed pineapple and shredded coconut.
- Spoon the mousse into individual serving dishes or a larger bowl.
- Chill in the refrigerator for at least 2 hours before serving.
- Serve plain or with a graham cracker crust or crushed cookies.
Notes
- For a stronger Pina Colada flavor, add 1-2 tablespoons of rum extract.
- Ensure the cream cheese is fully softened for a smooth texture.
- Drain the crushed pineapple very well to prevent the mousse from becoming too watery.
- You can garnish with extra shredded coconut or a maraschino cherry.
