- 1/2 cup erythritol or other keto-friendly sweetener
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened shredded coconut
- 1/4 cup sugar-free chocolate chips (optional)
Instructions
- In a medium bowl, beat the softened cream cheese until smooth.
- Add the erythritol, heavy cream, and vanilla extract. Beat until light and fluffy.
- Stir in the shredded coconut and sugar-free chocolate chips (if using).
- Drop by spoonfuls onto a parchment-lined baking sheet or into silicone mini muffin molds.
- Refrigerate for at least 2 hours, or until firm.
- Serve chilled.
