Three delicious and easy-to-make Mexican-inspired appetizers perfect for any gathering.
Ingredients

- 1 avocado
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup corn kernels
- 1/2 cup black beans, rinsed and drained
- 1/4 cup diced red bell pepper
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 12 wonton wrappers
- 4 ounces cream cheese, softened
- 1/4 cup shredded Monterey Jack cheese
- 2 tablespoons chopped pickled jalapeños
- 1 tablespoon milk
Instructions
- For Guacamole: Mash avocado in a bowl. Add red onion, cilantro, lime juice, salt, and pepper. Mix well.
- For Corn and Black Bean Salsa: Combine corn, black beans, and red bell pepper in a bowl. In a separate small bowl, whisk olive oil, chili powder, and cumin. Pour over corn mixture and toss to coat.
- For Cream Cheese Jalapeño Wontons: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. In a bowl, combine cream cheese, Monterey Jack cheese, pickled jalapeños, and milk.
- Place a small spoonful of the cream cheese mixture in the center of each wonton wrapper. Fold the wonton wrapper into a triangle or desired shape, pressing the edges to seal.
- Bake wontons for 10-12 minutes, or until golden brown and crispy.
- Serve guacamole, corn and black bean salsa, and cream cheese jalapeño wontons as appetizers.
Notes
- Adjust spice level of the salsa by adding more or less chili powder.
- For crispier wontons, lightly brush with oil before baking.
- Serve with tortilla chips or fresh vegetables.
