- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 2 cups all-purpose flour
- 1/2 cup mini chocolate chips
- Additional powdered sugar for rolling
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
- Beat in the vanilla extract and peppermint extract.
- Gradually add the flour, mixing until just combined. Stir in the mini chocolate chips.
- Roll the dough into 1-inch balls. Place on prepared baking sheets.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Let cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely.
- Once cool, roll the cookies in additional powdered sugar.
Notes
- Make sure your butter is truly softened for the best texture.
- Do not overbake the cookies; they should be pale.
- Store in an airtight container at room temperature.
