Ingredients

  • 1/2 cup powdered sugar

  • 2 cups all-purpose flour
  • 1/2 cup mini chocolate chips
  • Additional powdered sugar for rolling

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
  3. Beat in the vanilla extract and peppermint extract.
  4. Gradually add the flour, mixing until just combined. Stir in the mini chocolate chips.
  5. Roll the dough into 1-inch balls. Place on prepared baking sheets.
  6. Bake for 12-15 minutes, or until the edges are lightly golden.
  7. Let cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely.
  8. Once cool, roll the cookies in additional powdered sugar.
