Bite-sized cheesecakes with a salted caramel apple filling and a crunchy streusel topping.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped apples
  • 1/4 cup caramel sauce
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 cup cold unsalted butter, cut into pieces

Instructions

  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners.
  2. In a small bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and 6 tablespoons melted butter. Press about 1 tablespoon of the mixture into the bottom of each muffin liner. Bake for 5 minutes.
  3. In a large bowl, beat cream cheese and 3/4 cup granulated sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate small bowl, combine chopped apples, caramel sauce, and salt.
  5. Spoon about 1 teaspoon of the apple mixture over the graham cracker crust in each muffin liner.
  6. Pour the cream cheese mixture over the apple filling, filling each liner about two-thirds full.
  7. In another small bowl, combine flour, brown sugar, and 1/4 cup cold butter. Use your fingers or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  8. Sprinkle the streusel topping evenly over the cream cheese mixture in each muffin liner.
  9. Bake for 18-20 minutes, or until the edges are set and the centers are almost set.
  10. Let the cheesecakes cool in the muffin tin for 10 minutes before transferring them to a wire rack to cool completely.
  11. Chill the cheesecake bites in the refrigerator for at least 2 hours before serving.

Notes

  • For a stronger caramel flavor, drizzle extra caramel sauce over the cooled cheesecake bites before serving.
  • You can use pre-made streusel topping if you are short on time.
