- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped apples
- 1/4 cup caramel sauce
- 1/4 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup packed brown sugar
- 1/4 cup cold unsalted butter, cut into pieces
Instructions
- Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners.
- In a small bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and 6 tablespoons melted butter. Press about 1 tablespoon of the mixture into the bottom of each muffin liner. Bake for 5 minutes.
- In a large bowl, beat cream cheese and 3/4 cup granulated sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract.
- In a separate small bowl, combine chopped apples, caramel sauce, and salt.
- Spoon about 1 teaspoon of the apple mixture over the graham cracker crust in each muffin liner.
- Pour the cream cheese mixture over the apple filling, filling each liner about two-thirds full.
- In another small bowl, combine flour, brown sugar, and 1/4 cup cold butter. Use your fingers or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Sprinkle the streusel topping evenly over the cream cheese mixture in each muffin liner.
- Bake for 18-20 minutes, or until the edges are set and the centers are almost set.
- Let the cheesecakes cool in the muffin tin for 10 minutes before transferring them to a wire rack to cool completely.
- Chill the cheesecake bites in the refrigerator for at least 2 hours before serving.
Notes
- For a stronger caramel flavor, drizzle extra caramel sauce over the cooled cheesecake bites before serving.
- You can use pre-made streusel topping if you are short on time.
- Ensure your cream cheese is fully softened to avoid lumps in your cheesecake filling.
