A hearty and flavorful Mexican-inspired casserole featuring tater tots, seasoned ground beef, beans, corn, and cheese.

- 1 pound ground beef
- 1 packet taco seasoning
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
- 1 cup shredded cheddar cheese
- 1 bag (16 ounces) frozen tater tots
- Optional toppings: sour cream, salsa, avocado
Instructions
- Preheat your oven to 375°F (190°C).
- Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
- Stir in the taco seasoning, black beans, corn, and Rotel tomatoes with green chilies. Cook for 5 minutes, stirring occasionally.
- Spread the meat mixture evenly in the bottom of a 9×13 inch baking dish.
- Sprinkle the shredded cheddar cheese over the meat mixture.
- Arrange the frozen tater tots in a single layer over the cheese.
- Bake for 25-30 minutes, or until the tater tots are golden brown and crispy, and the casserole is heated through.
- Let stand for 5 minutes before serving.
- Serve with your favorite optional toppings.
Notes
- For a spicier casserole, use a can of hot Rotel or add a pinch of cayenne pepper.
- You can substitute ground turkey or chicken for the ground beef.
- If you prefer a creamier casserole, you can add a can of cream of mushroom soup or cream of chicken soup to the meat mixture.
