Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken broth

  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin

Instructions

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add rice and cook, stirring, until lightly browned, about 5 minutes.
  3. Stir in chicken broth, tomato sauce, onion, garlic, salt, and cumin.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until liquid is absorbed and rice is tender.
  5. Let stand, covered, for 5 minutes before fluffing with a fork.

Notes

  • For a spicier rice, add a pinch of cayenne pepper.
  • You can substitute vegetable broth for chicken broth for a vegetarian option.
