- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 cloves garlic, minced
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
- In a large bowl, combine the chicken pieces, zucchini slices, cherry tomatoes, and olives.
- In a small bowl, whisk together the olive oil, minced garlic, oregano, basil, salt, and pepper.
- Pour the oil mixture over the chicken and vegetables. Toss gently until everything is evenly coated.
- Spread the mixture in a single layer in the prepared baking dish.
- Bake for 20 minutes.
- Remove the dish from the oven and sprinkle the feta cheese over the top.
- Return to the oven and bake for another 5 to 10 minutes, or until the chicken is cooked through and the cheese is slightly melted.
- Serve hot.
Notes
- You can substitute chicken thighs for breasts if you prefer.
- Add a squeeze of fresh lemon juice after baking for brightness.
