Description
A creamy, savory chicken soup inspired by the popular Marry Me Chicken dish.
Ingredients

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup sun-dried tomatoes in oil, drained and chopped
- 2 cups fresh spinach
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chicken pieces and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add onion to the pot and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer.
- Return the cooked chicken to the pot.
- Stir in heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Heat gently, do not boil.
- Stir in sun-dried tomatoes.
- Add spinach and cook until wilted, about 2 minutes.
- Serve hot.
Notes
- For a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the simmering soup until thickened.
- You can substitute chicken thighs for chicken breasts.
