Description

Mantecadas are traditional Spanish muffins, known for their soft, tender crumb and slightly sweet, buttery flavor. They are often enjoyed for breakfast or as a snack with coffee or tea.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 12-cup muffin tin, or line with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the mantecadas cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer flavor, you can add a pinch of cinnamon to the dry ingredients.
  • Ensure your butter and eggs are at room temperature for best results.
  • Do not overmix the batter; this can lead to tough muffins.
