- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract

- ¼ cup limoncello
- Zest of 1 large lemon
- For the Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons limoncello
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Alternately add dry ingredients and milk to the wet ingredients, beginning and ending with dry ingredients, mixing until just combined.
- Fold in limoncello and lemon zest.
- Pour batter into the prepared cake pan and spread evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
- For the glaze, whisk together powdered sugar and limoncello until smooth.
- Pour glaze over the cooled cake, allowing it to drip down the sides.
