A quick and flavorful dish combining shrimp, lemon, garlic, and quinoa.
Ingredients

- 1 cup quinoa
- 2 cups water or broth
- 1 pound raw shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Rinse the quinoa under cold water. Combine quinoa and water or broth in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed. Fluff with a fork.
- While quinoa cooks, season the shrimp lightly with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for about 1 minute until fragrant. Do not let the garlic burn.
- Add the shrimp to the skillet. Cook for 2-3 minutes per side until pink and cooked through.
- Remove the skillet from the heat. Stir in the lemon juice and lemon zest with the shrimp.
- Add the cooked quinoa to the skillet with the shrimp mixture. Toss everything together until well combined and heated through.
- Stir in the chopped fresh parsley. Taste and adjust salt and pepper if needed.
- Serve immediately.
Notes
- You can substitute vegetable broth for water to increase flavor in the quinoa.
- For extra heat, add a pinch of red pepper flakes with the garlic.
