Description
A quick and flavorful one-pan meal featuring shrimp, asparagus, and orzo pasta tossed in a lemon garlic sauce.
Ingredients
Scale
- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 1 cup orzo pasta
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Season the shrimp lightly with salt and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the shrimp and cook for 2-3 minutes per side until pink. Remove the shrimp from the skillet and set aside.
- Add the remaining 2 tablespoons of olive oil to the same skillet. Add the asparagus and cook for 3-4 minutes until tender-crisp.
- Add the minced garlic to the skillet and cook for 1 minute until fragrant.
- Stir in the orzo pasta and toast for 1 minute.
- Pour in the chicken broth and lemon juice. Bring to a simmer, then cover and cook for 8-10 minutes, or until the orzo is tender and most of the liquid is absorbed. Stir occasionally.
- Stir in the lemon zest and return the cooked shrimp to the skillet. Cook until the shrimp is heated through, about 1 minute.
- Remove from heat. Stir in the fresh parsley. Season with additional salt and pepper if needed.
Notes
- For extra richness, stir in 2 tablespoons of butter at the end.
- You can substitute vegetable broth for chicken broth if preferred.
