Description

A simple recipe for chicken cooked with lemon, feta cheese, and orzo pasta.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • Salt to taste

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  4. Add the minced garlic to the same skillet and cook for 30 seconds until fragrant.
  5. Pour in the chicken broth and bring to a simmer.
  6. Stir in the orzo pasta. Cook according to package directions, usually about 10 minutes, stirring occasionally until the liquid is absorbed.
  7. Stir the cooked chicken back into the orzo.
  8. Remove the skillet from the heat. Stir in the lemon juice, lemon zest, and crumbled feta cheese.
  9. Taste and adjust salt if needed before serving.

Notes

  • You can add chopped fresh parsley for color before serving.
  • If the mixture seems too dry, add a splash of water or extra broth while cooking the orzo.
