- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup cold unsalted butter, cut into cubes
- 1/4 teaspoon salt
- 1 (14 ounce) can sweetened condensed milk
- 1/2 cup fresh lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
- In a medium bowl, combine flour, sugar, and salt. Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Press about two-thirds of the crumb mixture evenly into the bottom of the prepared pan.
- Bake for 15 minutes, or until lightly golden.
- While the crust bakes, whisk together sweetened condensed milk, lemon juice, and lemon zest in a bowl until smooth.
- Pour the lemon filling over the warm crust.
- Crumble the remaining streusel mixture evenly over the lemon filling.
- Bake for 20-25 minutes, or until the topping is golden brown and the filling is set.
- Let cool completely in the pan on a wire rack before lifting out and cutting into bars.
Notes
- Ensure butter is very cold for the best crumb topping.
- Cool completely before cutting to prevent the bars from falling apart.
- Store at room temperature in an airtight container for up to 3 days or in the refrigerator for up to 1 week.
