Ingredients

- 1 pound pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup capers, drained
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 1/4 cup chopped fresh parsley
- Salt to taste
- Black pepper to taste
Instructions
- Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Add capers, lemon juice, and lemon zest to the skillet. Stir to combine.
- Add the drained pasta to the skillet.
- Toss the pasta with the sauce, adding reserved pasta water a tablespoon at a time if needed to create a light sauce.
- Stir in fresh parsley.
- Season with salt and pepper to taste.
Notes
- For a creamier sauce, add 2 tablespoons of butter or a splash of heavy cream.
- You can add grilled chicken or shrimp for extra protein.
- A pinch of red pepper flakes can add a touch of heat.
