Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and cream cheese until light and fluffy.
- Gradually add the granulated sugar and beat until well combined.
- Beat in the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract, key lime juice, and key lime zest.
- Add the dry ingredients to the wet ingredients in three additions, mixing on low speed until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 60-75 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- Prepare the frosting: In a medium bowl, beat the softened cream cheese and butter until smooth.
- Gradually add the powdered sugar, mixing until combined.
- Stir in the key lime juice and zest until the frosting is smooth and spreadable.
- Once the cake is completely cool, frost the top with the cream cheese frosting.
