Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together the almond flour, erythritol, baking powder, cinnamon, nutmeg, and salt.
- In a separate medium bowl, whisk together the almond milk, melted butter, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the diced peaches.
- Divide the batter evenly among the 12 muffin cups.
- In a small bowl, combine the 2 tablespoons almond flour, 1 tablespoon erythritol, and 1 tablespoon melted butter. Mix until crumbly.
- Sprinkle the crumb topping over each muffin.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
