  • 2 tablespoons almond flour (for topping)
  • 1 tablespoon erythritol (for topping)
  • 1 tablespoon melted butter (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the almond flour, erythritol, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, whisk together the almond milk, melted butter, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the diced peaches.
  6. Divide the batter evenly among the 12 muffin cups.
