Instructions
- In a medium bowl, beat the softened cream cheese until smooth.
- Add the heavy cream, erythritol, and vanilla extract. Beat until light and fluffy.
- Gently fold in half of the fresh blueberries into the cheesecake mixture.
- In individual serving glasses or jars, layer the cheesecake mixture and the remaining fresh blueberries.
- Repeat the layers until the glasses are full.
- Chill in the refrigerator for at least 30 minutes before serving.
