  • 1 pound Italian sausage, casing removed
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups water
  • 1 pound small red or yellow potatoes, quartered
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 5 ounces fresh spinach
  • 1/2 cup grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain off excess fat.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth, water, diced tomatoes (undrained), basil, oregano, and red pepper flakes (if using). Bring to a boil.
  5. Add potatoes to the pot. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until potatoes are tender.
  6. Stir in fresh spinach and cook until wilted, about 2-3 minutes.
  7. Season with salt and black pepper to taste.
  8. Ladle into bowls and serve hot, garnished with grated Parmesan cheese.
