- 1 tablespoon olive oil
- 1 pound Italian sausage, casing removed
- 1 large onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 8 cups chicken broth
- 2 cups water
- 1 pound small red or yellow potatoes, quartered
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 5 ounces fresh spinach
- 1/2 cup grated Parmesan cheese for serving
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain off excess fat.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth, water, diced tomatoes (undrained), basil, oregano, and red pepper flakes (if using). Bring to a boil.
- Add potatoes to the pot. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until potatoes are tender.
- Stir in fresh spinach and cook until wilted, about 2-3 minutes.
- Season with salt and black pepper to taste.
- Ladle into bowls and serve hot, garnished with grated Parmesan cheese.
Notes
- For a creamier soup, you can add 1/2 cup heavy cream or milk during the last few minutes of cooking.
- Adjust the amount of red pepper flakes to your preferred spice level.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
