A unique Italian twist on the popular Thai Drunken Noodles, featuring a savory tomato-based sauce with Italian herbs and spices, tossed with your favorite pasta and protein.


Ingredients

  • 1 pound pasta (linguine, spaghetti, or fettuccine)
  • 1 tablespoon olive oil
  • 1 pound protein (chicken breast, shrimp, or Italian sausage), cut into bite-sized pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (28 ounce) can crushed tomatoes
  • 1/4 cup dry red wine
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium-high heat.
  3. Add protein and cook until browned and cooked through. Remove protein from skillet and set aside.
  4. Add onion and bell peppers to the skillet and cook until softened, about 5-7 minutes.
  5. Add garlic and red pepper flakes (if using) and cook for 1 minute more until fragrant.
  6. Pour in crushed tomatoes, red wine, Italian seasoning, salt, and pepper. Bring to a simmer.
  7. Return protein to the skillet. Reduce heat to low, cover, and simmer for 10 minutes, allowing flavors to meld.
  8. Add cooked pasta to the skillet with the sauce. Toss to combine. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  9. Stir in fresh basil and Parmesan cheese.
  10. Serve immediately.

Notes

  • For a spicier dish, increase the red pepper flakes.
  • Feel free to add other vegetables like mushrooms or zucchini.
  • This dish can be made ahead of time and reheated.
