A unique Italian twist on the popular Thai Drunken Noodles, featuring a savory tomato-based sauce with Italian herbs and spices, tossed with your favorite pasta and protein.

- 1 pound pasta (linguine, spaghetti, or fettuccine)
- 1 tablespoon olive oil
- 1 pound protein (chicken breast, shrimp, or Italian sausage), cut into bite-sized pieces
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 teaspoon red pepper flakes (optional)
- 1 (28 ounce) can crushed tomatoes
- 1/4 cup dry red wine
- 1 tablespoon dried Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
Instructions
- Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add protein and cook until browned and cooked through. Remove protein from skillet and set aside.
- Add onion and bell peppers to the skillet and cook until softened, about 5-7 minutes.
- Add garlic and red pepper flakes (if using) and cook for 1 minute more until fragrant.
- Pour in crushed tomatoes, red wine, Italian seasoning, salt, and pepper. Bring to a simmer.
- Return protein to the skillet. Reduce heat to low, cover, and simmer for 10 minutes, allowing flavors to meld.
- Add cooked pasta to the skillet with the sauce. Toss to combine. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Stir in fresh basil and Parmesan cheese.
- Serve immediately.
Notes
- For a spicier dish, increase the red pepper flakes.
- Feel free to add other vegetables like mushrooms or zucchini.
- This dish can be made ahead of time and reheated.
