A simple and satisfying pasta dish featuring creamy tortellini and fresh spinach.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (16 ounce) package cheese tortellini
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 5 ounces fresh spinach
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
- Stir in the tortellini, diced tomatoes (with their juice), heavy cream, salt, pepper, and red pepper flakes if using. Bring to a simmer.
- Reduce heat to low, cover, and cook for 10-12 minutes, or until tortellini are tender, stirring occasionally.
- Stir in the fresh spinach until it wilts.
- Remove from heat and stir in the Parmesan cheese. Serve immediately.
Notes
- For a richer flavor, you can add a splash of white wine when you add the tomatoes.
- If you don’t have fresh spinach, you can use frozen spinach, thawed and squeezed dry.
