Description

A simple and satisfying pasta dish featuring creamy tortellini and fresh spinach.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (16 ounce) package cheese tortellini
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 5 ounces fresh spinach
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  2. Stir in the tortellini, diced tomatoes (with their juice), heavy cream, salt, pepper, and red pepper flakes if using. Bring to a simmer.
  3. Reduce heat to low, cover, and cook for 10-12 minutes, or until tortellini are tender, stirring occasionally.
  4. Stir in the fresh spinach until it wilts.
  5. Remove from heat and stir in the Parmesan cheese. Serve immediately.

Notes

  • For a richer flavor, you can add a splash of white wine when you add the tomatoes.
  • If you don’t have fresh spinach, you can use frozen spinach, thawed and squeezed dry.
