A simple and delicious one-pan meal featuring ground turkey and sweet potatoes.
Ingredients

- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large sweet potato, peeled and diced
- 1/2 cup chicken broth
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain excess fat.
- Add onion and cook until softened, about 5 minutes.
- Stir in garlic, smoked paprika, cumin, salt, and pepper. Cook for 1 minute more until fragrant.
- Add diced sweet potato and chicken broth. Bring to a simmer, then cover and cook for 15-20 minutes, or until sweet potatoes are tender.
- Stir in cilantro, if using. Serve hot.
Notes
- For a spicier dish, add a pinch of cayenne pepper.
- You can substitute ground chicken or beef for the turkey.
