Ingredients

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 (8 ounce) can crushed pineapple, undrained
- 1/2 cup chopped red bell pepper
- 1/4 cup chopped onion
- 1 teaspoon curry powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides.
- Stir in rice, chicken broth, crushed pineapple, red bell pepper, onion, and curry powder.
- Bring to a boil, then reduce heat, cover, and simmer for 20 minutes, or until rice is cooked and liquid is absorbed.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For extra flavor, you can add a pinch of ginger.
- Garnish with fresh cilantro if desired.
