Ingredients

- 1 pound pasta
- 1 (28 ounce) can crushed tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 5 ounces fresh spinach
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Combine pasta, crushed tomatoes, vegetable broth, oregano, basil, garlic powder, and red pepper flakes (if using) in a large pot or Dutch oven.
- Bring to a boil over medium-high heat, then reduce heat to medium and simmer, stirring occasionally, until pasta is al dente, about 10-12 minutes.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Season with salt and black pepper to taste.
- Serve immediately, topped with Parmesan cheese if desired.
Notes
- For a creamier sauce, stir in a splash of heavy cream or milk at the end.
- Add cooked chicken, sausage, or shrimp for a heartier meal.
