Description

Ingredients

  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 5 ounces fresh spinach
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Combine pasta, crushed tomatoes, vegetable broth, oregano, basil, garlic powder, and red pepper flakes (if using) in a large pot or Dutch oven.
  2. Bring to a boil over medium-high heat, then reduce heat to medium and simmer, stirring occasionally, until pasta is al dente, about 10-12 minutes.
  3. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  4. Season with salt and black pepper to taste.
