- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs

- 1/2 cup sour cream
- 2 cups fresh peaches, peeled and chopped
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a small bowl, stir sour cream and chopped peaches together.
- Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream and peach mixture, beginning and ending with dry ingredients. Mix until just combined.
- Fold in chopped pecans, if using.
- Pour batter into the prepared cake pan.
- Bake for 40-50 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
