Description

A quick and easy tortellini dish with a creamy spinach and tomato sauce.


Ingredients

  • 1 (19 ounce) package refrigerated cheese tortellini
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup fresh spinach

Instructions

  1. Cook tortellini according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Stir in diced tomatoes, heavy cream, Parmesan cheese, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  4. Add spinach to the skillet and cook until wilted, about 2 minutes.
  5. Add the cooked tortellini to the skillet and toss to coat with the sauce.
  6. Serve immediately.

Notes

  • For a spicier dish, add a pinch of red pepper flakes with the garlic.
  • You can substitute half-and-half for heavy cream for a lighter sauce.
