- 2 cups cooked chicken, shredded
- 1 cup biscuit mix
- 1/2 cup milk
- 1/4 cup butter, melted
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup chopped carrots
- 1/2 cup chicken broth
- 1/4 cup sour cream
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the biscuit mix, milk, and melted butter. Stir until just combined.
- Gently fold in the cooked chicken, onion, celery, and carrots.
- In a separate small bowl, whisk together the chicken broth and sour cream. Pour this mixture over the chicken and biscuit mixture.
- Stir in the parsley, salt, and pepper.
- Pour the mixture into a greased 8×8 inch baking dish.
- Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
- Let it cool slightly before serving.
Notes
- You can use leftover cooked chicken or rotisserie chicken for this recipe.
- Add other vegetables like peas or corn if desired.
- Serve hot with a side salad for a complete meal.
