- 1 lb boneless, skinless chicken breasts
- 4 slices bacon, chopped
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cut chicken breasts into bite-sized pieces.
- In a large skillet, cook bacon over medium heat until crisp. Remove bacon and set aside, leaving drippings in the skillet.
- Add olive oil to the skillet. Add chicken and cook until browned on all sides.
- Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
- Stir in heavy cream and Parmesan cheese. Season with salt and pepper.
- Return bacon to the skillet and stir to combine.
- Simmer for 5-7 minutes, or until the sauce has thickened and the chicken is cooked through.
Notes
- Serve over pasta, rice, or with a side salad.
- For a spicier dish, add a pinch of red pepper flakes.
