- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar, plus more for strawberries
- 1 tablespoon lemon juice
- 1 1/2 cups mascarpone cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/4 cups strong brewed coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 24 ladyfingers
- Fresh mint leaves for garnish (optional)
Instructions
- Toss sliced strawberries with 1 tablespoon of granulated sugar and lemon juice. Let sit for 15 minutes.
- In a medium bowl, beat mascarpone cheese, powdered sugar, and vanilla extract until smooth.
- In a shallow dish, combine cooled coffee and coffee liqueur (if using).
- Quickly dip each ladyfinger into the coffee mixture, ensuring they are moistened but not soggy.
- Arrange half of the dipped ladyfingers in the bottom of a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Layer half of the sliced strawberries over the mascarpone.
- Repeat layers with remaining ladyfingers, mascarpone mixture, and strawberries.
- Cover and refrigerate for at least 4 hours, or preferably overnight.
- Garnish with fresh mint leaves before serving, if desired.
Notes
- For a more intense strawberry flavor, you can crush some of the strawberries.
- Adjust the amount of coffee and liqueur to your preference.
