Description

Ingredients

  • For the Bread: 2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1 1/2 cups granulated sugar, 3/4 cup vegetable oil, 3 large eggs, 1 teaspoon vanilla extract, 1 (8 ounce) can crushed pineapple, undrained, 2 cups mashed ripe bananas (about 4 medium), 1 cup chopped pecans
  • For the Frosting: 1 (8 ounce) package cream cheese, softened, 1/2 cup (1 stick) unsalted butter, softened, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 2 cups powdered sugar, 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk together sugar, oil, eggs, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. Stir in crushed pineapple, mashed bananas, and chopped pecans.
  6. Pour batter into the prepared baking pan.
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
  9. While the bread cools, prepare the frosting. In a medium bowl, beat cream cheese and butter until smooth.
  10. Beat in cinnamon and nutmeg.
  11. Gradually add powdered sugar and vanilla extract, beating until light and fluffy.
  12. Spread frosting evenly over the cooled bread.
