Description

A recipe for making chicken quesadillas with a sweet and spicy hot honey glaze.


Ingredients

  • 1 cup cooked, shredded chicken
  • 1/4 cup hot honey
  • 1 teaspoon lime juice
  • 4 large flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon butter or oil for cooking

Instructions

  1. In a small bowl, mix the shredded chicken, hot honey, and lime juice.
  2. Place one tortilla in a large skillet over medium heat.
  3. Sprinkle half of the Monterey Jack cheese and half of the cheddar cheese over the tortilla.
  4. Spoon half of the hot honey chicken mixture evenly over the cheese.
  5. Top with a second tortilla.
  6. Cook for 3 to 4 minutes per side, until the tortilla is golden brown and the cheese is melted.
  7. Remove from the skillet and repeat with the remaining ingredients to make a second quesadilla.
  8. Slice each quesadilla into wedges before serving.

Notes

  • You can adjust the amount of hot honey based on your preference for spice and sweetness.
  • Use leftover rotisserie chicken for quick preparation.
