A recipe for making chicken quesadillas with a sweet and spicy hot honey glaze.

- 1 cup cooked, shredded chicken
- 1/4 cup hot honey
- 1 teaspoon lime juice
- 4 large flour tortillas
- 1 cup shredded Monterey Jack cheese
- 1/2 cup shredded cheddar cheese
- 1 tablespoon butter or oil for cooking
Instructions
- In a small bowl, mix the shredded chicken, hot honey, and lime juice.
- Place one tortilla in a large skillet over medium heat.
- Sprinkle half of the Monterey Jack cheese and half of the cheddar cheese over the tortilla.
- Spoon half of the hot honey chicken mixture evenly over the cheese.
- Top with a second tortilla.
- Cook for 3 to 4 minutes per side, until the tortilla is golden brown and the cheese is melted.
- Remove from the skillet and repeat with the remaining ingredients to make a second quesadilla.
- Slice each quesadilla into wedges before serving.
Notes
- You can adjust the amount of hot honey based on your preference for spice and sweetness.
- Use leftover rotisserie chicken for quick preparation.
