Description

Ingredients

  • 1 pound ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup uncooked white rice
  • 2 cups water
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons minced garlic
  • 1 tablespoon rice vinegar

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a bowl, combine the ground meat, breadcrumbs, milk, egg, salt, and pepper. Mix gently until just combined.
  3. Roll the mixture into small meatballs, about 1 inch in diameter. Place them on the prepared baking sheet.
  4. Bake the meatballs for 15 minutes.
  5. While the meatballs bake, prepare the sauce by whisking together the honey, soy sauce, minced garlic, and rice vinegar in a small saucepan. Heat over medium heat until the mixture simmers lightly. Remove from heat.
  6. In a separate, oven-safe baking dish (about 8×8 inches), combine the uncooked rice and water. Cover the dish tightly with foil.
  7. Bake the rice dish for 20 minutes.
  8. Remove the rice dish from the oven. Carefully remove the foil.
  9. Place the partially cooked meatballs on top of the rice. Pour the honey garlic sauce evenly over the meatballs.
  10. Return the dish to the oven, uncovered, and bake for an additional 10 to 15 minutes, or until the meatballs are cooked through and the sauce has thickened slightly.
  11. Let the dish rest for 5 minutes before serving.

Notes

  • You can substitute brown rice for white rice, but adjust the cooking time according to package directions.
  • For smaller meatballs, reduce the initial baking time slightly.
