Description
Enjoy flaky, homemade pop tarts filled with sweet wild blueberries and a hint of almond.

- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup (2 sticks) cold unsalted butter, cut into cubes
- 1/2 cup ice water
- 1 egg, beaten (for egg wash)
- 1/4 cup granulated sugar (for sprinkling)
- 1 1/2 cups wild blueberries (fresh or frozen)
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon almond extract
- 1/4 teaspoon ground cinnamon
- 1/4 cup sliced almonds (optional, for topping)
Instructions
- In a large bowl, whisk together flour and salt. Cut in cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix. Divide dough in half, flatten into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- In a medium bowl, combine wild blueberries, 1/4 cup granulated sugar, cornstarch, almond extract, and cinnamon. Stir gently to coat the blueberries.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out one disc of dough into a rectangle about 1/8-inch thick. Cut into 4 equal rectangles. Repeat with the second disc of dough. You should have 8 rectangles.
- Spoon about 2 tablespoons of the blueberry filling onto one half of each of 4 dough rectangles, leaving a 1/2-inch border.
- Brush the edges of the filled rectangles with water. Place the remaining 4 dough rectangles on top, pressing the edges firmly to seal. Crimp the edges with a fork.
- Cut small slits in the top of each pop tart to allow steam to escape.
- Place the pop tarts on the prepared baking sheet. Brush the tops with the beaten egg wash and sprinkle with granulated sugar and sliced almonds, if using.
- Bake for 20-25 minutes, or until golden brown and puffed.
- Let cool completely on a wire rack before serving.
Notes
- For a sweeter filling, you can add more sugar.
- If using frozen blueberries, do not thaw them before mixing with the filling ingredients.
- You can make your own frosting to drizzle over the cooled pop tarts.
