Ingredients

  • 1 cup warm plant-based milk
  • 2 ¼ teaspoons active dry yeast
  • ½ cup granulated sugar
  • 1 teaspoon salt
  • ⅓ cup vegetable oil
  • 4 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • ½ cup vegan butter, softened
  • ½ cup packed brown sugar
  • ¼ cup rainbow sprinkles
  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons plant-based milk
  • ½ teaspoon vanilla extract

Instructions

  1. In a large bowl, combine warm plant-based milk and yeast. Let sit for 5-10 minutes until foamy.
  2. Stir in granulated sugar, salt, and vegetable oil.
  3. Gradually add flour, mixing until a soft dough forms. Knead on a floured surface for 5-7 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. Punch down the dough and roll it out into a large rectangle (about 12×18 inches) on a lightly floured surface.
  6. Spread softened vegan butter evenly over the dough, leaving a small border.
  7. In a small bowl, mix cinnamon and brown sugar. Sprinkle evenly over the buttered dough.
  8. Sprinkle rainbow sprinkles over the cinnamon-sugar mixture.
  9. Starting from the long edge, tightly roll up the dough. Pinch the seam to seal.
  10. Cut the roll into 12 equal slices.
  11. Place slices cut-side up in a greased baking dish. Cover and let rise for another 30 minutes.
  12. Preheat oven to 375°F (190°C).
  13. Bake for 20-25 minutes, or until golden brown.
  14. While rolls are baking, prepare the glaze by whisking together powdered sugar, plant-based milk, and vanilla extract until smooth. Add more milk if needed for desired consistency.
  15. Let rolls cool slightly before drizzling with glaze.
