- 1 cup warm plant-based milk
- 2 ¼ teaspoons active dry yeast
- ½ cup granulated sugar
- 1 teaspoon salt
- ⅓ cup vegetable oil
- 4 cups all-purpose flour
- 1 tablespoon ground cinnamon
- ½ cup vegan butter, softened
- ½ cup packed brown sugar
- ¼ cup rainbow sprinkles
- For the Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons plant-based milk
- ½ teaspoon vanilla extract
Instructions
- In a large bowl, combine warm plant-based milk and yeast. Let sit for 5-10 minutes until foamy.
- Stir in granulated sugar, salt, and vegetable oil.
- Gradually add flour, mixing until a soft dough forms. Knead on a floured surface for 5-7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- Punch down the dough and roll it out into a large rectangle (about 12×18 inches) on a lightly floured surface.
- Spread softened vegan butter evenly over the dough, leaving a small border.
- In a small bowl, mix cinnamon and brown sugar. Sprinkle evenly over the buttered dough.
- Sprinkle rainbow sprinkles over the cinnamon-sugar mixture.
- Starting from the long edge, tightly roll up the dough. Pinch the seam to seal.
- Cut the roll into 12 equal slices.
- Place slices cut-side up in a greased baking dish. Cover and let rise for another 30 minutes.
- Preheat oven to 375°F (190°C).
- Bake for 20-25 minutes, or until golden brown.
- While rolls are baking, prepare the glaze by whisking together powdered sugar, plant-based milk, and vanilla extract until smooth. Add more milk if needed for desired consistency.
- Let rolls cool slightly before drizzling with glaze.

- Ensure your plant-based milk is warm, not hot, to avoid killing the yeast.
- For extra fluffy rolls, let the dough rise in a slightly warm oven (turned off).
- You can add more or fewer sprinkles to your preference.
