Ingredients

  • 2 lbs ripe tomatoes, cored and roughly chopped
  • 1/4 cup olive oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp red pepper flakes (optional)
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup fresh basil leaves, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and cook until translucent, about 5-7 minutes.
  3. Stir in minced garlic, dried oregano, dried basil, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  4. Add the chopped tomatoes to the pot. Bring to a simmer.
  5. Reduce heat to low, cover, and cook for 30-40 minutes, stirring occasionally, until tomatoes break down.
  6. Remove from heat. Use an immersion blender to blend the sauce to your desired consistency, or carefully transfer to a regular blender (vent the lid for hot liquids).
  7. Season with salt and black pepper to taste.
  8. Serve warm over pasta, pizza, or as a base for other dishes. Garnish with fresh basil.

Notes

  • For a smoother sauce, strain it through a fine-mesh sieve after blending.
