- 2 large eggs
- 1/4 cup vegetable oil
Instructions
- In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, black pepper, and cayenne pepper (if using).
- In a separate bowl, whisk together the milk, eggs, and vegetable oil.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix; a few lumps are okay.
- Heat about 2-3 inches of vegetable oil in a heavy-bottomed pot or Dutch oven to 350°F (175°C).
- Dip your fish or seafood into the batter, ensuring it is fully coated.
- Carefully place the battered item into the hot oil. Do not overcrowd the pot.
- Fry for 3-5 minutes per side, or until golden brown and cooked through.
- Remove from oil with a slotted spoon and drain on a wire rack or paper towels.

- For extra crispy results, you can double-dip your seafood after the first fry.
- Adjust cayenne pepper to your spice preference.
