- 1/2 cup garlic cloves, peeled
- 1/4 cup neutral oil (like vegetable or canola)
- 1 tablespoon vinegar (rice or white)
- 1 teaspoon salt
- 1/2 teaspoon sugar
Instructions
- Combine chopped chilies and garlic in a food processor.
- Pulse until a coarse paste forms.
- Heat oil in a small saucepan over medium heat.
- Add chili garlic paste to the hot oil.
- Cook, stirring frequently, for 5-7 minutes until fragrant and slightly darkened.
- Stir in vinegar, salt, and sugar.
- Cook for another 2-3 minutes.
- Remove from heat and let cool completely.
- Transfer to an airtight jar and store in the refrigerator.
Notes
- Adjust the amount of chilies and garlic to your preference.
- Use gloves when handling chilies to avoid skin irritation.
- The sauce will thicken as it cools.
- Store in the refrigerator for up to 2-3 weeks.
