Description

A straightforward recipe for making tender chicken served with rich, homemade gravy.


Ingredients

  • 2 lbs chicken pieces (bone-in or boneless)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1/4 cup all-purpose flour
  • 1/2 cup cold water
  • Salt and black pepper to taste
  • 1 teaspoon dried thyme

Instructions

  1. Season the chicken pieces generously with salt and pepper.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  3. Brown the chicken on all sides, working in batches if necessary. Remove the chicken and set aside.
  4. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  5. Add the minced garlic and cook for 1 minute more until fragrant.
  6. Pour in the chicken broth and bring the mixture to a simmer. Scrape up any browned bits from the bottom of the pot.
  7. Return the chicken to the pot. Add the dried thyme.
  8. Reduce the heat to low, cover the pot, and simmer until the chicken is cooked through and tender, about 30 to 40 minutes, depending on the cut.
  9. Remove the cooked chicken from the pot and keep it warm.
  10. To make the gravy, whisk the flour and cold water together in a small bowl until smooth to create a slurry.
  11. Increase the heat under the pot to medium. Slowly whisk the flour slurry into the simmering liquid in the pot.
  12. Continue to whisk until the gravy thickens, about 3 to 5 minutes. Taste and adjust seasoning with salt and pepper.
  13. Serve the chicken immediately topped with the hot gravy.

Notes

  • For a thicker gravy, use 1/3 cup flour instead of 1/4 cup.
  • If you prefer a smoother gravy, strain the liquid before adding the slurry.
  • Use the drippings from the cooked chicken for extra flavor in the broth.
