Enjoy these delicious homemade vegan pop tarts filled with a sweet blueberry filling.

- 1 batch vegan pie crust dough
- 1 cup fresh or frozen blueberries
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1/4 teaspoon ground cinnamon
- 1/4 cup powdered sugar
- 1–2 tablespoons plant-based milk
- 1/4 cup vegan white frosting
Instructions
- Prepare your vegan pie crust dough according to your favorite recipe. Chill for at least 30 minutes.
- In a saucepan, combine blueberries, granulated sugar, cornstarch, lemon juice, and cinnamon. Cook over medium heat, stirring occasionally, until the blueberries break down and the mixture thickens, about 5-7 minutes. Let cool completely.
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the chilled pie crust dough to about 1/8-inch thickness. Cut out 4-inch by 5-inch rectangles. You will need 8 rectangles in total.
- Place about 2 tablespoons of the cooled blueberry filling onto 4 of the rectangles, leaving a 1/2-inch border.
- Top each filled rectangle with another rectangle of dough. Crimp the edges with a fork to seal.
- Cut a few small slits in the top of each pop tart to allow steam to escape.
- Place the pop tarts on the prepared baking sheet.
- Bake for 20-25 minutes, or until golden brown. Let cool completely on a wire rack.
- In a small bowl, whisk together powdered sugar and plant-based milk until smooth. Add more milk if needed to reach desired drizzling consistency.
- Drizzle the glaze over the cooled pop tarts. If using vegan white frosting, spread it on top of the cooled pop tarts before adding sprinkles if desired.
Notes
- For a sweeter filling, add an extra tablespoon of sugar.
- You can use any vegan frosting you like for decorating.
- Sprinkles can be added for extra fun.
