- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cut into pieces
- 1 large egg yolk
- 2 tablespoons ice water
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Fresh berries for garnish
Instructions
- In a large bowl, whisk together the flour, sugar, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the egg yolk and ice water.
- Add the egg mixture to the flour mixture and stir until just combined.
- Gather the dough into a ball, flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat oven to 375°F (190°C).
- On a lightly floured surface, roll out the dough to a 12-inch circle.
- Carefully transfer the dough to a 9-inch pie plate. Trim and crimp the edges.
- Bake for 15-20 minutes, or until golden brown. Let cool completely.
- In a medium bowl, beat the heavy cream until soft peaks form.
- Add the powdered sugar and vanilla extract and beat until stiff peaks form.
- Spread the whipped cream over the cooled crust.
- Garnish with fresh berries.
- Refrigerate for at least 1 hour before serving.
Notes
- You can substitute other fruits for the berries.
- For a chocolate version, add 2 tablespoons of cocoa powder to the flour mixture.
- This dessert is best served chilled.
